I woke up thinking about food this morning and knew that I would be spending most of the day cooking. I started out cutting up veggies and proceeded from there.

Cheesy Chicken Casserole

The veggies: 1 medium onion, three mini sweet peppers, two green onions, 1/2 zucchini sliced thin then quartered, one large clove of garlic.

Next I started my roux: one tablespoon of butter melted, then add one – two tablespoons flour. Stir together to thicken the butter/flour combo. Then add evaporated milk and water as your combo thickens. I then add my cheese and stir, as it thickens add milk/water to get to the thicken consistency as you go.

I add four different cheeses:

1/2 cup of shredded sharp cheddar
1/2 cup of mexican four cheeses
1/4 cup of smoked gouda
2 slices of pepper Jack


I combined the veggies, cheese sauce, and chicken together in the skillet, added Ritz crackers on top of the casserole.


I cooked the casserole at 350 degrees for 30 minutes or
until golden brown.


I actually made two different dishes. I halfed the veggies and mixed them, the macaroni and chicken together with cubed smoke gouda, and sharp cheddar and mayonnaise. I sometimes use Balsamic vinaigrette instead of mayonnaise.


Two recipes today so I’ll not be cooking tomorrow and will get back to my quilting.
